Low-FODMAP Diet Week Three: The Best Flapjacks Ever

I should start this post by stating that I am the luckiest girl in the world that I have a financé who’s more than happy to cook for me. Constantly. And all despite my ever-changing dietary requirements.

He rocks. But enough of that because today, I dedicate this post to these banging flapjacks.

For me, the hardest thing about following a strict exclusion diet for six weeks, is snacks. There are only so many bananas, rice cakes and grapes I can eat before getting bored.

Enter stage right, flapjacks.

Before this diet took over my life – and made me feel fan-fucking-tastic by the way – I never gave flapjacks a chance. I always thought they were overrated. I’d usually choose anything chocolate covered over oats. Until Al and I experimented and made our own.

How bloody wrong was I.

We mix light brown sugar with melted sunflower spread, rolled oats and a shit-tonne of maple syrup to create pure heaven. They’re sticky and gooey and buttery and delicious. And we snack on them daily.

Even Sanj, of K.O Rasoi declared them the BEST EVER and that is saying something.

  1. I used to be the biggest flapjack naysayer I knew but these were a game changer. They’re not hard and chewy, they’re crispy, melt-in-the-mouth and straight-up fking heavenly. Thank you Jo and Al for opening my eyes to the world of oats, maple syrup and butter. We’re not worthy. And when I say “we” I mean me. Keep ’em coming.
